Friday Easy Bento

After yesterday’s very labor intensive bento, I just wanted a very easy lunch that I could throw together in the morning with minimal fuss. Therefore today baby A. got an easy sandwich bento. The sandwich is made of brioche bread, home made hummus, ham and lettuce. I used a cutter to turn into a cute little piggie. As a side I made mini sausage “octopi” and just threw some berries in the container and called it a day. The hummus is what took the longest out of everything, and I threw that together fairly quickly the night before. I found these cute little cans of chickpeas that are perfect for making a smaller portion of hummus. I also made a very simple recipe since it was for a five year old, here it is: – 1 8oz can of garbanzo beans – 2 Tbsp of tahini – 2 garlic cloves – The juice of half a lemon – 1 green onion – salt and pepper Blend all of the above in a food processor, add …

Vegan Oatmeal

We actually like oatmeal in my house. We find it to be the perfect base for so many toppings, it is extremely versatile, and can be made to anyone’s taste. This one is a very simple vegan recipe. I like to boil my oats in milk, I find it makes them creamy and gives them more flavor. Ingredients: 1/2 cup oats 1-2 cups almond milk (depends how thick you want the consistency to be) 1 tsp sugar 1/2 tsp cinnamon 1 tsp vanilla Pinch of salt Mix all of these in a pot and bring to a boil. Simmer until oats are the texture and consistency you prefer. Toppings: The list of toppings is endless, so many possibilities, in the above picture I used: Sliced strawberries Walnuts Agave syrup Other options that would make a great vegan oatmeal are: Mango Coconut flakes Almonds Agave syrup Add 1 tsp of cocoa when cooking oats Toasted hazelnuts Chopped dates Brown sugar Add 2 Tbsp pumpkin purée and 1/2 tsp nutmeg when cooking oats Pumpkin seeds (pepitas) Pecans …

One smoothie a day

Breakfast for the past week has been a smoothie. Now, I know it can get repetitive and boring when you eat the same thing every day, but that is the beauty of the smoothie, it is a magical concoction that can be whatever you want it to be that day! It is also a great way to eat a LOT of fruit and even sneaking some vegetables in right at the beginning of your day. The combinations are endless and they can be vegan, vegetarian, or not. Whatever you like them to be. I like to buy fruit in bulk and flash freeze them. That way I know my fruit are fresh and organic, and all of that (like to get whatever is in season also). However you can just buy the bags of frozen fruits and make your life easier if you do not have the time. So far my favorite smoothie is one that reminds me of my college days. New Year Resolutions – 2017

This year one of my main resolutions is to eat healthier. By this I don’t mean cut out a few carbs or fats. No. I mean I am going to try a mostly vegan diet. That being said my target is 80-20. 80% vegan, 20% non. The idea behind this is that I am the main cook for my entire family and they are not on board with being vegan (not that I am fully ready for that either) therefore the 80-20 seems like a good compromise for all of us. We will be getting some meats and dairy while at the same time increasing the consumption of good, healthy, plant based food. And if as a byproduct I get to look like a super model, well I wont be too upset about it 😉 So to kick off the year and my new resolution I made one of my favorite breakfast: Avocado Spread on Toast. Name: Paris Morning Bakery Cuisine: Korean Bakery Location: 4900 S University Dr, Davie, FL 33328 (Also has a location in Lauderhill and one in Plantation) Paris Morning Bakery is a Korean bakery, we have been to two of their locations and have enjoyed them a lot. First the atmosphere. The place is very nicely decorated, clean, and has a modern feel to it. It is a bit different as far as: you come in, grab a tray and serve yourself what you will be buying. You can then pay for it and eat it, or you can ask the lady at the counter to wrap it up for you. The service is excellent. They are very kind and attentive. If you don’t like your drink, they will make you a new one. They are happy to assist you. The food is very good. Understand that it is a little bit different, kimchi croquettes, breads stuffed with sweet potato, sweet breads, most things are sweet. I happen to love the kimchi croquettes. It is filled with a …

Food Aboard The Carnival Fantasy — Day 2

The next day dawned with a clear, sunny sky, which I enjoyed with a cup of coffee from the highest deck, and took lots of pictures of the sunrise… Lots! Breakfast — Since we wanted to debark as soon as possible, we had an early breakfast. We went to the dining room for this one, not the buffet. It was actually a pretty disappointing breakfast. There weren’t that many customers around, but they still had a hard time getting our drinks (coffee, milk, orange juice). We actually got our food before we got the juice. As far as breakfast I had eggs benedict with a side of corned beef hash. The eggs benedict were pretty bad, the hollandaise sauce was in mousse form (why?) which had dried up when they put it under the broiler (again, why?) and at that point it was a pretty dry flavorless paste on top of the eggs. The corned beef hash was more of a mashed potatoes with corned beef, it was a bit odd. All in all pretty …

Camping Adventures — Breakfast Casserole On The Grill

The second day dawned beautifully. It was a nice temperature in Florida (for once) and my toddler was just soooo happy to be out and about all she did was run from the moment she woke up. Our itinerary for this day was to have breakfast in the camp, then go to the Renaissance Faire that was taking place in the same park as the one we were in. But before we went off to see knights and princesses we needed a sturdy breakfast to get us through all the walking we had to do (and let me tell you it was A LOT of walking). Since it was so early in the morning and most of my family was still asleep I did not feel like starting a fire, so I opted for the easier way, and just lighted the charcoal grill that is provided in every campsite (we had brought a bag of charcoal with the idea of my husband, the grilling master, making some burgers). St. Patrick’s Day Extravaganza — Nutty Soda Bread

Soda bread is a great thing, because it is so incredibly low maintenance. It does not require yeast, which can take quite a bit of work to prepare. You can literally mix the ingredients together, throw it in the oven and fuggetaboutit! Which allows you to have fresh, homemade bread at dinner without spending ten hours kneading, letting it rise and such. Soda bread is also extremely versatile. You like sweet bread? add more sugar, or honey, and raisins. You like herbs? Add rosemary or thyme. Like nuts? Add whichever one you like. The bottom line is that soda bread is very forgiving, which gives you room to experiment without it turning into a disaster. I particularly like walnuts, and thought that they would be great in soda bread. Well, they are! Quickie Smoothie

For this recipe there is not a lot of foreplay *cough* I mean before prep necessary. It is quick and easy, which is exactly what I am looking for when I drag my semi-awake body to the kitchen Mondays at 7 in the morning. I don’t want to be awake yet, much less be cooking at this hour. Which is why this smoothie recipe is great to start your week. Now if you want to freeze your own fruit, milk your own cows, or press your own almonds (for almond milk, get it?) be my guest. However this recipe is about convenience and speediness. Korean Inspired Pancakes, The Breakfast Of Champions!

About a couple of months ago I decided to give Korean pancakes a try. They are salty, they are full of vegetables, and frankly they just looked exotically delicious. So I decided to make a classic; a green onion pancake. I printed a recipe from a reputable Korean cook, gathered my ingredients and went at it with extreme confidence, after all; How hard could it be? Well, I found out that there is a learning process to it. You can’t just add batter and fry, the onions release moisture, which make the pancake soggy if it is too thick. I learned that the egg has to be added at a certain time, that the green onions don’t always stick to the batter. Basically I made quite a few, but every try ended in me having to fix something since we Americans (at least the ones in my house) are not much for eating raw pancake mix, or raw egg, or slimy onions.
