Welcome Spring with a Strawberry Pie

To me, nothing screams spring more than strawberries. Their beautiful vibrant color lends itself perfectly to this flowering season. This is why whenever Easter rolls around, or if I am throwing a garden party, or dinner party during Spring, my dessert of choice is always strawberry pie. This is a great recipe to put together when you don’t have a lot of prep-time or when you just want to display some beautiful homegrown strawberries, since you will not be cooking the fruit. For this recipe I used some of my Strawberry-Rosé low sugar preserves. If you make some, I highly recommend you use it for this pie, if not you can either skip this step or use any low-sugar strawberry jam or preserves. I find that it adds an extra punch of strawberry flavor and counteracts a bit of that “fake” strawberry flavoring that the gelatin has. Creme Brulee Three Ways

Creme brulee seems to have a bit of a rep for being a fancy, snooty dessert. It might be because of the French name, or maybe because it is a bit delicate during the cooking period. But the reality of it is that creme brulee is very easy to make, and once you have a handle on the basics you can branch out and make it any flavor you want! Classic Creme Brulee — Ingredients: -1 quart heavy cream (the big carton they sell at any grocery store) -6 egg yolks -1/2 tsp salt -2 Tbsp vanilla extract -1 vanilla bean (optional) -1/2 cup of sugar -Extra sugar for topping Split the vanilla bean and remove the caviar (the little seeds inside). Put the caviar or seeds inside of a large mixing bowl, set aside. In a saucepan put the whole carton of cream and the vanilla bean (with the insides removed). Bring to a boil, and remove from the heat as soon as it does, discard vanilla bean. Set aside, and “fuhgeddaboudit,” at least for …

For this recipe there is not a lot of foreplay *cough* I mean before prep necessary. It is quick and easy, which is exactly what I am looking for when I drag my semi-awake body to the kitchen Mondays at 7 in the morning. I don’t want to be awake yet, much less be cooking at this hour. Which is why this smoothie recipe is great to start your week. My Mom’s Flan Recipe

My mom is a great cook and she makes the best Cuban food recipes. She is famous among our family and friends for her flans. So of course I asked her to share her recipe with the world! Flan is a delicate, versatile, delicious dessert. One of my favorite kinds of flan is cheese flan. But I also love the original, or coconut flan. They are all great! Since flan is something my mom always makes for special occasions, family dinners, or holidays it will always be, for me, a symbol of home! Give this recipe for the classic flan a try, and impress your family and friends with your knowledge of Cuban cuisine! Ingredients: -5 eggs -1 can of condensed milk -1 can of evaporated milk -1/2 tsp salt -1 Tbsp vanilla extract -4 Tbsp sugar In a blender, add eggs, condensed milk, evaporated milk, salt, and vanilla. The Easiest Dessert EVER

So remember how I taught you how to bake a cake that was super delicious, super fast and super easy? Well this dessert is even easier and still super delicious. (Using a lot of “Supers” today -_-) For this one you don’t actually have to make anything. Yes you heard me right, you don’t make anything, you just assemble. So no I am not giving you a recipe, I am just giving you an assembly manual. You will need the following store bought items: Pound Cake Raspberries Whipped Cream In its simpler form you get two slices of pound cake and spread whipped cream on each side (a generous amount). Then you place the raspberries on top of one slice (make them stand up if you want to look like a pro at this), and then you just put the other half on top of the raspberries. That’s it! A simple answer to your problems! Buy a cake mix! Now hear me out, I know that many frown upon the use of such a shortcut, but there are ways you can make a deliciously moist cake out of a simple mix. This is what you have to do to get the best cake possible from any mix: Substitute the water for whole milk. Use room temperature eggs. DO NOT over mix. A few small lumps are ok. DO NOT over bake.
