One smoothie a day

Breakfast for the past week has been a smoothie. Now, I know it can get repetitive and boring when you eat the same thing every day, but that is the beauty of the smoothie, it is a magical concoction that can be whatever you want it to be that day! It is also a great way to eat a LOT of fruit and even sneaking some vegetables in right at the beginning of your day. The combinations are endless and they can be vegan, vegetarian, or not. Whatever you like them to be. I like to buy fruit in bulk and flash freeze them. That way I know my fruit are fresh and organic, and all of that (like to get whatever is in season also). However you can just buy the bags of frozen fruits and make your life easier if you do not have the time. So far my favorite smoothie is one that reminds me of my college days. A Day In Nassau

Earlier this year I had the opportunity of going on my first cruise to Nassau, Bahamas. We went on the Carnival Fantasy. The ship is one of the smallest in their fleet, but it was actually a pretty nice, relaxed cruise. I write about our food experience aboard the ship in the following post: Day 1, Day 2, Day 3. Now this post is our candid opinion about our time in Nassau. My husband and I were not very impressed with Nassau. This was our first cruise together and our first time in Nassau. We were expecting an adventure Anthony Bourdain would have been proud of… instead we found a very touristy town. Previous to the trip we tried to be adventurous explorers and did many hours of research trying to find authentic food restaurants, to find historical sites, and meaningful adventures. Food Aboard The Carnival Fantasy — Day 3

Sunday was our day at sea. I spent this day relaxing around the pool with a few cocktails. We napped, and we ate… It was magical! Day 3: For both breakfast and lunch we just went to the buffet. For breakfast I had grits, ham, chicken flautas, fruit, and bread. For lunch we had the glorious burritos (my husband’s mission for the trip was to eat as many burritos as possible… somehow he only ended eating two though). Dinner — My husband ordered the caprese salad. It was good, with a basil pesto and oil, it was pretty yummy. I got the wild mushroom soup (one of my favorite soups). It was very good! My husband got the chicken parmesan as his entree (I guess he was feeling like Italian food that night). It was ok, nothing that exciting about it. The small side of potatoes au gratin was just blah, and the veggies were good. I ordered the lobster. I have to say I was very disappointed. It was just a tiny lobster tail with no …

Food Aboard The Carnival Fantasy — Day 2

The next day dawned with a clear, sunny sky, which I enjoyed with a cup of coffee from the highest deck, and took lots of pictures of the sunrise… Lots! Breakfast — Since we wanted to debark as soon as possible, we had an early breakfast. We went to the dining room for this one, not the buffet. It was actually a pretty disappointing breakfast. There weren’t that many customers around, but they still had a hard time getting our drinks (coffee, milk, orange juice). We actually got our food before we got the juice. As far as breakfast I had eggs benedict with a side of corned beef hash. The eggs benedict were pretty bad, the hollandaise sauce was in mousse form (why?) which had dried up when they put it under the broiler (again, why?) and at that point it was a pretty dry flavorless paste on top of the eggs. The corned beef hash was more of a mashed potatoes with corned beef, it was a bit odd. All in all pretty …

Braised Short Ribs

This is a low and slow meal. Perfect for weekend entertaining, or a “cena” (late night dinner). Short ribs cooked slowly in a wine sauce, need I say more? With a little time and preparation you can make this dish and look like a star to your guests! Or just make it for yourself, nothing wrong with indulging yourself every now and then… or always! Braised Short Ribs — (Serves 4-8 depending on how willing to share your family is o_O) Ingredients: -8 short ribs -3 carrots diced -2 celery sticks diced -1 onion diced -4 garlic cloves pounded into a fine paste… Or minced, depending on how much aggression you have pent up. -salt and pepper to taste -2 cups of red wine -2 cups beef broth -1 Tbsp of Worcestershire sauce -1/4 cup tomato paste -2 bay leaves -chives for garnish -olive oil Season your short ribs with salt and pepper. St. Patrick’s Day Extravaganza — Honey Mustard Corned Beef Roast

Happy St. Patrick’s Day everyone! We continue our series with the main star of our meal (though that colcannon certainly gave it a run for its money) the Corned Beef roast! Now, as you might know, corned beef is a brisket cut, and like any brisket it needs to be cooked at a low temperature for a long time (low and slow) in order for it to be soft and tender when we eat it. Therefore this roast is going to take a bit of time to prepare, but never fear, your patience will be rewarded!! Honey Mustard Corned Beef Roast — Ingredients: -corned beef brisket -2 Tbsps honey -2 tsps whole grain mustard -2 1/2 Tbsps Dijon mustard -2 medium-sized onions quartered -3 garlic cloves, puréed -1 cup chicken stock -salt and pepper Mix whole grain mustard, Dijon mustard, honey, garlic and pepper. Lay the onions in the bottom of a roasting pan and set the corn beef brisket on top. Brush the brisket liberally with the honey mustard mixture. Use about half and preserve …

I love St. Patrick’s Day! It is a day we get to celebrate the culture of another country… and by culture I mean FOOD. Glorious corned beef, soda bread, potatoes, good beers, and whiskey… It brings a tear to me eye! Therefore I have decided that for the next couple of days I will give you some of my best Irish food recipes. The objective is to have a full Irish food spread by the end of this series, so you can impress your loved ones this weekend with your culinary know how of Irish cuisine! We will start with an Irish staple; the potato. Just like the Hispanics and Asians have the rice, the Irish have the potato.
